Oh my poor onions, I have discovered so many ways to preserve them. From dehydrating onions to the pickled green onions. Are you ready for yet another great way to preserve them? Have you ever tried canning caramelized onions? You should give it a try.
What are caramelized onions? They are onions which have had the natural sugars within them caramelize due to the slow cooking process. Well if you are not familiar with this type of onions, you have been missing out! They are uber delish and go well with many of your favorite things. Think baked or mashed potatoes, Philly cheese steak or a simple hot roast sandwich. The list is endless, you can pretty much have them with anything you like.

Here’s What You’ll Need:
- fresh onions
- knife
- chopping board
- butter
- small pan
- crock pot
- half pint canning jars
- dish towel
- ladle
- canning funnel
- butter knife
- jar lifter
- pressure canner
Peel your onions, then half them and slice into slices about a 1/4 inch thick. Melt your butter in the crock pot on, then add your onions. Let sit for at least an hour and the onions will start sweating a little. Then it is time to lower the heat and let it cook for at least another 10 hours.
If you are impatient like me, then you may want to leave it cook overnight. When you get up in the morning, you will wake up to caramelized, golden brown onions. Prepare your jars by heating them up in a pan filled with water. The lids as well as the rings, should be left simmering and kept hot until you use them.Avoid making a mess by using a canning funnel to transfer the onions into the jars.
Wipe the rims with a damp cloth and remove any air bubbles that may have formed inside the jar. Screw on the rings and lids and process in your pressure canner for 70 minutes at 10 pounds of pressure. Allow the pressure to go all the way down to zero, before lifting your jars out. Place your jars on a folded kitchen towel on your counter or table, and let them cool and seal.
