Here’s What You’ll Need:

  • raw chicken cut into pieces
  • cold water
  • salt & pepper
  • onion
  • carrots
  • celery
  • garlic
  • bay leaves
  • parsley
  • black peppercorn
  • large pot with lid
  • fine mesh strainer
  • ladle or spoon
  • large bowl
  • small containers or jars

Step By Step Instructions

1. Fill your large pot with cold water, about 4 quarts.

2. Add your cut vegetables and fresh herbs.

3. Add your chicken, including any bones or meatless parts.

4. Allow all the ingredients to boil for at least 30 minutes, leaving the lid on.

5. A broth will rise to the top and the sides of the pot, skim this off using a spoon.

6. Reduce the heat and simmer with lid on for at least 2 hours.

7. Once the stock is ready, skim off any oil modules on the top using a spoon.
Or you can place it in your freezer for an hour or two and all the oil will harden making it easier to remove.

8. Strain your cooled down stock using a strainer over a large bowl.

If you will not be using all the stock immediately, it is important that you store it in smaller containers in order to prevent any bacteria growth. Mark and date all containers and refrigerate for 7 days or freeze for a maximum of 3 months.
