Canning Sweet Potatoes

Show me someone who does not enjoy sweet potatoes, and I will show you someone who does not know what they are missing. Personally I enjoy my sweet potatoes freshly cooked, however you also have the option to can your sweet potatoes.

It is a very simple process if you are using the pressure canner. The peeling and cutting into chunks may take up a little more of your time than you would like to give.

Here’s What You’ll Need:

  • sweet potatoes
  • large stockpot
  • knife
  • mason jars
  • pressure canner
  • dish towel
  • cutting board
  • jar lifter
  • brown sugar (optional)

Canning Granny recommends that you boil your sweet potatoes first in the stockpot for about 10 minutes, this will make it easier to peel them. She also cuts them into chunks before stuffing them into the canning jars.

You can choose between boiling water or brown sugar syrup to fill your jars. Quarts are processed at 10 pounds pressure for 90 minutes, pints only require about 65 minutes. Make sure all jars are sealed, before storing away.
