Oh my, those juicy strawberries. They are always nice to have especially if you have grown your own strawberries in your garden. However the problem, as we recently discovered comes when you have way too many. We always oven dry some of our strawberries, however this year we decided to try canning strawberry pie filling.
You will need to dust out your water bath canner for this one. Of course the pie filling has to be made first before you can begin canning. Not to worry this only requires 3 ingredients and pretty easy to make. I used some immediately for a tasty strawberry pie, which the family thoroughly enjoyed. The recipe below makes about 7 quarts. Yummy!

Here’s What You’ll Need:
- fresh strawberries
- clear jel
- cold water
- sugar lemon juice
- kettle
- large pot
- water bath canner
- canning jars with lids
- canning utensils
- kitchen towel
- food coloring (optional)
As always before you start, make sure that you wash your strawberries well under running water in the kitchen sink. In the pot mix your sugar and clear jel, and add water plus any food coloring in you are using that. Place on medium heat and wait until it starts to boil and thicken. Don’t forget to stir the mixture well.
Your lemon juice goes in next, allow it to boil for 60 seconds, before slowly adding your well drained strawberries. Without wasting any time transfer the mixture into the jars, leaving an inch below the rim. Screw on lids tight and process in water bath canner for 30 minutes. Use the jar lifter to pull the jars out and allow them to cool and seal on top of the kitchen towel on the kitchen towel.
