You know when peach season comes along, you may end up being stuck with plenty of surplus peaches especially if you have peach trees in your backyard. In the past we have talked about canning peaches, today I want to share this canning peach salsa recipe.
I will personally can a batch of just peaches, then use this recipe to make this delicious peach salsa. I love that it does not require too many peaches if you are using large ones. Of course, as with any recipe I can just double or triple the ingredients.
-------------------------------------------------------------------
Here’s What You’ll Need:
- large peaches
- limes or vinegar
- raw honey
- chopped onion
- jalapeno peppers
- garlic cloves
- cilantro
- water
- large canning pot with lid
- rack
- jar tongs
- canning pint mason jars
- canning lids and rings
- small saucepan
- large saucepan
- medium bowls
- large bowl
- plastic knife
Before you begin making your salsa, you need to sterilize your canning jars and lids by placing them in a small saucepan, bring them to a boil in water and let them simmer whilst you make your salsa. For the salsa all the ingredients but the peaches go into a large bowl.
Peel and chop your peaches then mix them into all the other ingredients in the large bowl. Each jar is filled up to half an inch below the rim. Close each of the jars and place into the canner, boiling for 20 to 25 minutes. Remove jars and place on top of an old kitchen towel. You should hear pops as the jars start to seal. Store in a cool dry place for 6 to 12 months.
