How To Can Mixed Vegetables

I know most people already know how to can carrots or how to can green beans, but not many people combine their vegetables in the mason jars. I used to love buying frozen mixed vegetables so this how I got started canning mixed vegetables.

You can add many different vegetables to your mix, from carrots to green beans to peas. We usually just get these fresh right from our garden. Since you will be canning low acidic produce, the pressure canner is what you will be using to can your greens.

Here’s What You’ll Need:

  • pressure canner
  • fresh green beans, peas and carrots
  • canning jars
  • kitchen towel
  • jar lifter
  • medium pan

As always, before you begin canning your vegetables sterilize and prepare your jars. Then you can go ahead and chop all your vegetables. It is important that you only use fresh vegetables. Place the chopped vegetables in a pan, covering with a little water before bring to a boil and leaving to simmer for at least 5 minutes.

Fill your jars with the mixed vegetables up to at least an inch below the rim and then top each jar up with some of the water from the pan. Screw the lids on tightly and place jars into the pressure canner. At sea level process at 11 lbs of pressure for 25 minutes.
