It is always more satisfying when you can make your own stuff at home right? I have already shown you how to make your own bacon and even how to make your own self raising flour. I am sure you would also be interested in how to cure your own ham, right?

You can have it ready for use in all your ham recipes. Otherwise you can take it one step further and actually smoke your ham too. If you can’t locate the fancy sugar listed in the ingredients do what I do, just use brown sugar instead. The success of your ‘cure’ also kind of depends on the cut that you use. Therefore you may want to take your time when selecting your pork. All of the different spices, can also be grown in your backyard garden.

So this is one of those recipe in which the ingredients used are directly proportional to the weight of the pork being cured. The first step therefore is determine how much of each ingredient is required for the piece of pork you want to cure. Only the spices are not really measured, but that is not your license to go crazy with them.

When your salts mixture is ready, you can then rub it all over your pork. The pork is then set aside inside the glass bowl to cure. The curing process will take anything from 6 to 8 days and once again it depends on the size of the pork. There is a formula you can use to determine the number of days required for yours. Just don’t forget to drain away the liquid every few days.
