When winter comes along sometimes you need a nice hearty warm chili to do the job. I have already shared with you before this homemade chili recipe, that my hubby really loves. Next on the list, is the new version which is this vegan lentil chili recipe, that you’ll absolutely love.
I know if you are not vegan, you would probably skip this recipe. But let me tell you that you would have made a very huge mistake. Not only has half of the ingredients been replaced, by healthy ones it is super easy to make too. You will need just over an hour to make this recipe, but it sure is worth the time.
Here’s What You’ll Need:
- olive oil
- red bell pepper
- chili powder
- brown lentils
- diced tomatoes
- bay leaf
- vegetable stock or chicken stock
- fresh chopped cilantro
- sea salt
- fresh ground black pepper
- sour cream (optional)
- cheddar cheese (optional)
- croutons (optional)
- tortilla chips (optional)
- food processor
- dutch oven
Another reason I love this recipe is it allows me to make use of the dutch oven. Heat the olive oil to medium heat and saute the red bell pepper and onion for about 8 minutes. They should be lightly brown as well as soft when it is time to add the chili powder as well as the garlic.
The lentils, bay leaf, tomatoes and chili powder as well as stock. You need the salt and black pepper to season. Allow to boil over lower heat, partially cover the oven for about 30 minutes, the lentils will be tender when they are ready. The bay leaf must be removed from the oven.
The last step is the secret to making the chili thick, just remove about 3 cups of the lentils and then process until it is a puree. Then all you have to do is re-introduce back into the oven and mix everything well. Season with salt and pepper. If cilantro is available, you can add to the oven before you serve. They will love it, trust me on this one! 🙂
