Solar Canning Fruit In A Solar Oven

Ok, you have probably heard of pressure canning, ball canning and oven canning. You may even have canned a lot of fruit, vegetables and meat using these methods. Well, today I discovered yet another canning method, solar canning in a solar oven.

Apparently, this method is only safe for acid foods such as your fruits and tomatoes. You should never can any meats or vegetables in your solar oven.

Here’s What You’ll Need:

  • solar oven
  • mason jars with lids
  • water
  • sugar or salt
  • lemon juice (optional for tomatoes)
  • kitchen towel or damp cloth

This is a great way to use the renewable solar energy. You can can as many quarts as can fit in your solar oven. If you do not have a solar oven, you can build one it is pretty easy to do so. Preparing the fruit for canning should not take more than 10 minutes.

Step By Step Instructions:

1. Wash your fruit and place in clean mason jars.

2. Add a little salt, sugar or lemon juice.

3. Add water up to the neck of your mason jar, leaving enough space to allow for expansion.

4. Screw on the lids tightly and place your mason jars into your solar oven.

5. Leave in solar oven for most of the day or until temperature reaches 220 degrees F. At this temperature the water in the jars should start bubbling out to top of the lids.

6. Remove boiling jars and wipe off any spillage, before setting aside to cool.

7. The lid of the jar will be pulled down to create a vacuum seal as the jars begin to cool.

8. To ensure jars are properly sealed, hit with a spoon and listen for a ringing sound. Also the lid should not be moving when you press on it.

That it all there is to this process. If you have any jars that are not properly sealed just add more water to them or fruit and repeat the whole process.

Frederico in the video below, uses a slightly different method where he does not screw on the lights tightly before placing them into the solar oven. He only screws them on tightly as he removes them from the oven.
