Homemade Granola Bar Recipe

How about this for a healthy homemade snack you and the family can crunch on on the homestead. I found this really delicious homemade granola bar recipe online, I would be selfish not to share it with you.

If you hate baking don’t worry, this is a no bake recipe. It is also kid friendly, soft, chewy and can be made in batches that you pop into the freezer for long term storage. Allow 15 minutes for prep and about 5 minutes of cooking time.

Here’s What You’ll Need:

  • raw or brown sugar
  • honey
  • coconut oil
  • fine sea salt
  • crunchy peanut butter
  • vanilla extract
  • crisped rice cereal
  • old fashioned oats
  • ground flax seed
  • mini chocolate chips
  • cookie sheet
  • parchment paper
  • knife
  • saucepan
  • large mixing bowl
  • large spoon
  • plastic wrap
  • Ziploc bags

Start off by mixing the crispy rice cereal, oats and ground flax seed in the large bowl. Meanwhile the coconut oil, raw sugar, sea salt and honey are placed in a saucepan over medium heat. Bring to a boil for 60 seconds, while stirring the whole time. Remove from the heat and add the vanilla extract and the peanut butter, continuing to stir until the mixture is smooth.

This mixture is then poured over the dry ingredients in the large bowl and worked into them until well combined. Let cool for up to 10 minutes. Cut out your parchment paper so it fits snugly into the bottom of the cookie sheet. Empty the contents of the bowl onto the cookie sheet.

Place more parchment paper on top and then another cookie sheet. You will apply pressure to the top to help compact everything. Remove and add chocolate chips before repeating the process again. Let cool on the counter, before removing and cutting into bars using your knife. Makes up to 35 chewy granola bars. 🙂

Storage Tip: Simply wrap each bar in plastic wrap and then put the individual bars into a large ziploc bag.
