Grilled Chicken With Roasted Tomato & Red Onions

I love my chickens, but I tend to love my chicken dishes even more. Well after the eggs, of course. LOL. After sharing with you how to grow red onions the other day. I thought it would be appropriate to share one of my favorite recipes which uses them, this grilled chicken with roasted tomato and red onions.

This is one of those recipes that look so appetizing, you naturally think that it is complicated to make. You will be happy to know, that this is not the case at all. Not only is it an easy recipe, it is a quick one too. For a nice change up, you can grill fish instead of the chicken. Still delish!

Here’s What You’ll Need:

First things first, preheat your oven to 400 degrees F. Prep all your ingredients as instructed and then combine your onions, tomatoes, olive oil, herbs de Provence, red pepper flakes, salt as well as black pepper in the bowl. Give everything a good toss and then transfer to the olive oil coated baking sheet pan. Allow to roast for at least 12 minutes.

Cut and season your chicken breasts with salt and pepper, before grilling with olive oil over medium heat. Let each side cook for just about 2 minutes. Everything comes together when you serve. The roasted vegetables are put on top of the chicken breasts. The freshly chopped basil is used as the perfect garnish. Voila! 🙂
