Creamy Mushroom Garlic Chicken Recipe

Every now and again I decided to treat the family to what we would call a ‘fancy’ dinner in our neck of the woods. Although its a pretty simple dinner menu that I sometimes serve with pasta, but today I made it with mashed potatoes. The main attraction of course is this creamy mushroom garlic chicken recipe.

I know if you go to a local grocery store in most towns, you will find boneless skinless chicken breasts already prepared for you. I have to skin and cut my breasts, which doesn’t take much time to do anyway. Also I did not have fresh mushrooms, so I just popped open one of our canned mushroom jars and used that instead.

Here’s What You’ll Need:

  • chicken breasts
  • salt
  • black pepper
  • flour
  • olive oil
  • butter
  • white mushrooms
  • minced garlic
  • chicken stock
  • heavy cream
  • parsley
  • shallow dish
  • large skillet
  • wooden spoon

The first thing to do, is to season the chicken breasts with salt and pepper. Then its time to coat each breast with flour in the shallow dish. Heat oil and butter in the skillet, cook each piece for up to 5 minutes per side. Remove from the skillet, and add more oil and saute the garlic and the mushrooms.

It is time to make the sauce, the homemade chicken stock goes in next, and allow to boil in the skillet. Remove the skillet from the heat again, so that you can add the cream. With your cream added, you have to heat the skillet again for at least 2 minutes. There you go, your sauce is ready, serve over the chicken.
