Canning Vegetable Soup

With winter pratically knocking on our doors, would you not want to have some delicious soup to keep you warm? Why not can some vegetable soup now, so that it is ready for you on demand when winter comes.

The vegetable soup recipe is so simple even a 1st grader could make this. Although you will find a list of ingredients below you can add or substitute these with whatever you have available from your garden.

Here’s What You’ll Need:

  • potatoes
  • tomatoes
  • carrots
  • lima beans
  • corn
  • celery
  • onion
  • water
  • salt
  • pepper
  • large stockpot
  • laddle
  • pressure canner
  • canning jars with lids
  • kitchen towel

Make sure your vegetables are clean. The larger ones suchh as tomatoes and potatoes should be peeled and the diced. All ingredients are thrown into a large stock pot then brought to a boil before letting simmer for about 15 minutes.

While you wait for your soup to cook, you can prepare your canning jars keeping them hot and warm. When soup is ready use the laddle to fill each jar leaving at least an inch of space at the top. Pressure can at 10 lbs pressure for 55 minutes for pint jars or 85 minutes for quarts.

For this one Canning granny recommends you leave the canner to naturally cool down before lifting out your jars. The jars should start to PING after you leave them to cool on kitchen counter.
