Canning Green Tomatoes

Have you ever tried to eat green tomatoes? If you haven’t then you are probably wondering why on earth would you want to take the time to can green tomatoes.

There are actual many uses for green tomatoes, from pickled to relish to green tomato jam and even with your eggs. This canning method allows you to preserve green tomatoes for frying. I love trying out new things, so here goes.

Here’s What You’ll Need:

  • fresh green tomatoes
  • wide mouth canning jars with lids
  • canning salt
  • citric acid
  • water
  • magnetic jar lifters
  • water bath canner
  • kitchen towel

Wash your tomatoes before slicing them about half an inch slices. Pack them into your canning jars and add one teaspoon of canning salt to each jar. Just in case you are worried about the tomatoes becoming acidic, you can add half a teaspoon of citric acid too.

Fill up each of your jars with boiling water, leaving enough headspace at the top. Follow the instructions for your water bath canner. Leigh processed her seven quarts in just seven minutes.
